The fresh growth on the spruce, or the spruce tip act the same as hops and was used as such in early American beers.

I had a pint of spruce tip yesterday at headkeepers in Greensburg, PA, and thought it was terrific. I generally prefer IPA's and Scottish ales but I like to explore outside my usual (such is the glory of microbrews) and I enjoyed this Harpoon 100 very much.

I wish this beer was still year-around. Once they went to seasonal, my local distributor won't stock it properly. I may be able to get it 3 or 4 months out of the 6 it is brewed.
